  • 6 ounces smoked slab bacon, cut into large chunks (1 heaping cup)
  • 1 tablespoon butter
  • 1 large onion, diced (1/2 cup)
  • 1 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 1 teaspoon dry mustard
  • 1 1/2 teaspoons light brown sugar
  • 1 tablespoon molasses
  • FOR THE SALTINE CRUST (OPTIONAL)
  • 1 sleeve saltine crackers
  • 1/4 teaspoon garlic powder
  • 2 teaspoons light brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon fresh thyme leaves
  • 3 tablespoons cold unsalted butter
  • TO FINISH THE DISH
  • 2 tablespoons sherry vinegar
  • 2 tablespoons Dijon mustard
