  • 3 medium-size firm-ripe bananas  (1 pound)
  • 1 tablespoon rum (optional)
  • 1 teaspoon each maple syrup, vanilla extract and brown sugar
  • 4 6-ounce mahimahi or swordfish fillets
  • 1/2 teaspoon each salt and pepper
  • 1 tablespoon oil, preferably macadamia nut, almond or avocado
  • Garnish: chopped toasted macadamia nuts
