Ingredients

  • 3 clove garlic , minced
  • 1 large onion , chopped (about 1 cup)
  • 1 small green pepper , chopped (about 1/2 cup)
  • 1 stalk celery , chopped (about 1/2 cup)
  • 1 pound smoked sausage , thinly sliced
  • 1 can (14.5 ounces) diced tomatoes , undrained
  • 1 cup chicken or beef stock or water
  • 1/2 teaspoon dried thyme leaves , crushed
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • 1 cup uncooked regular long-grain white rice
  • 4 green onion , chopped (about 1/2 cup)
