Ingredients

  • 1 cup  salsa
  • 2 teaspoons  cornstarch
  • 8   8-inch flour tortillas
  • 1 tablespoon  cooking oil
  • 1   medium green sweet pepper, cut into strips
  • 1 12-ounce  can whole kernel corn, drained
  • 3   green onions, bias-sliced into 1-inch pieces (1/2 cup)
  • 1 pound  lean ground beef
  • 10   cherry tomatoes, halved
  • 1/2 cup  shredded cheddar cheese or Monterey Jack cheese with jalapeno peppers (2 ounces)
  •   Cilantro sprigs (optional)
