Warm Potato Salad

Ingredients

  • 4 pounds  red potatoes, washed and sliced 1/8 inch thick
  • 1 pound  bacon, cooked and crumbled
  • 2   shallots, peeled and sliced 1/8 inch thick
  • 1/4 cup  white-wine vinegar
  • 1/4 cup  olive oil
  • 3 tablespoons  whole-grain mustard
  • 2 teaspoons  chopped fresh tarragon
  • 1 teaspoon  kosher salt
  • 1 teaspoon  coarsely ground black pepper

Description

Place Potatoes In A 6-quart Saucepan. Add Enough Cold Water To Cover Potatoes. Bring To A Boil Over High Heat.
