  • 1   medium onion, chopped (1/2 cup)
  • 2   small zucchini, cut into julienne strips (1-1/2 cups)
  • 1   medium red or green sweet pepper, cut into 1-inch squares (1 cup)
  • 2 cups  hot cooked rice
