Vegetable-chicken Lasagna

Ingredients

  • 1 15-ounce carton  fat-free ricotta cheese
  • 1 10-ounce package  frozen chopped spinach, thawed and well drained
  • 1   egg, slightly beaten
  • 1 teaspoon  dried Italian seasoning, crushed
  • 1 tablespoon  olive oil
  • 1 pound  skinless, boneless chicken breast halves, cut into 1/2-inch pieces
  • 8 ounces  fresh mushrooms, sliced
  • 1 medium  onion, chopped
  • 2 cloves  garlic, minced
  • 1 teaspoon  dried Italian seasoning, crushed
  • 2 14-1/2-ounce cans  diced tomatoes with basil, garlic, and oregano
  • 1 8-ounce can  tomato sauce
  • 4   carrots, peeled and shredded (2 cups)
  • 1/2 teaspoon  ground black pepper
  • 9   dried lasagna noodles
  •   Nonstick cooking spray
  • 2 cups  shredded mozzarella cheese (8 ounces)
  • 1/4 cup  grated Parmesan cheese (1 ounce)
