  • 2 tablespoons  plus 1 teaspoon jerk seasoning
  • 1   boneless pork loin roast (3 to 3-1/2 pounds)
  • 5 tablespoons  butter
  • 1 cup  diced sweet peppers, assorted colors
  • 1   quart milk
  • 1-1/2 teaspoons  garlic salt
  • 1-1/3 cups  instant polenta
  • 1/4 teaspoon  black pepper
