Apple Mincemeat Pie

Ingredients

  •   Pie Pastry:
  • 2 cups  all-purpose flour
  • 2 tablespoons  grated lemon rind
  • 1 teaspoon  salt
  • 2/3 cup  margarine (cut into small pieces)
  • 5 to 6 tablespoons  ice water
  •   Filling:
  • 2-1/2 medium-size  McIntosh apples, pared, cored and cut in cubes (7 to 8 cups)
  • 1 jar  (20.5 ounces) mincemeat
  • 3 tablespoons  cornstarch
  • 1 teaspoon  grated lemon rind
  • 1 tablespoon  fresh lemon juice
  • 2 tablespoons  butter or margarine
