Maple Sugar-crusted Apple Pie

Ingredients

2 cups all-purpose flour 1/4 cup plus 2 tablespoons maple sugar 1/2 teaspoon salt 12 tablespoons (1 1/2 sticks) unsalted butter, cut into pea-size bits and frozen 2 tablespoons shortening, cut into pea-size bits and frozen 1/4 cup ice water, mixed with a few drops of lemon juice For  the Filling: 10 to 12 medium Granny Smith or McIntosh apples, peeled, cored, quartered, and then cut into thirds (10 cups) 1/4 cup sugar 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1/4 cup cornstarch 2 tablespoons arrowroot 1/4 cup maple syrup 1 large egg, lightly beaten with 2 tablespoons water
