Ingredients

  • 6 4- to 5-ounce  fresh or frozen sole fillets, 1/2 inch thick
  •   Salt and freshly ground black pepper
  • 8 ounces  peeled, deveined, cooked medium shrimp, coarsely chopped, or 6 ounces cooked lump crab meat (about 1 1/2 cups)
  • 1 6 1/2-ounce container  semi-soft cheese with dried tomato and basil*
  • 6 tablespoons  finely shredded Parmesan cheese
  • 1/4 cup  finely shredded fresh basil or snipped Italian parsley
