Crab-cake Sandwich

Ingredients

  • 1 cup  crumbled saltine crackers (approximately 8 crackers)
  • 1/3 cup  thinly sliced green onion
  • 1/2 cup  diced red bell pepper
  • 1/3 cup  mayonnaise
  • 1 teaspoon  Old Bay seasoning
  • 1 tablespoon  fresh lemon juice
  • 1/4 teaspoon  salt
  • 1   large egg
  • 1 1/2 pounds  fresh lump crabmeat, drained and shell pieces removed
  • 3 tablespoons  butter
  • 6   lettuce leaves
  • 6   poppyseed kaiser rolls
  • 1 recipe  Remoulade Sauce (Recipe follows.)

Description

In A Large Bowl, Combine Crackers, Green Onion, Bell Pepper, Mayonnaise, Old Bay Seasoning, Lemon Juice, Salt, And Egg, Stirring Well. Gently Fold Crabmeat Into Mixture. Shape Into 6 Patties.
