- 3/4 cup plus 3 tablespoons vegetable oil
- 1 pound fresh okra, trimmed and cut crosswise into 1/4-inch slices or 1 (1-pound) package frozen cut okra, thawed
- 4 teaspoons distilled white vinegar
- 1 cup all-purpose flour
- 1/4 cup chopped yellow onion
- 1 1/4 cups chopped green onion (white and green parts), divided
- 1 clove garlic, minced
- 2 cups chopped green bell pepper
- 1 cup chopped celery
- 2 tablespoons plus 2 teaspoons chopped fresh parsley leaves, divided
- 2 cups canned tomatoes, mashed with their liquid
- 4 cups shrimp stock or chicken stock
- 2 bay leaves
- 2 whole sprigs fresh thyme
- 1 teaspoon hot pepper sauce
- 1 teaspoon salt
- 1 pound medium shrimp, peeled and deveined
- 1 pound lump crabmeat, picked over for shells and cartilage
- 1 pint freshly shucked oysters with liquor (optional)

Description
In A Medium Skillet* Over Medium Heat, Heat 3 Tablespoons Oil. Add Okra And Cook, Stirring Frequently, For 30 Minutes. Add Vinegar And Cook For Approximately 10 Minutes, Or Until Okra Is No Longer Ropy Or Slimy And Is Lightly Browned. Remove From Heat And
