Chocolate Tart With Hazelnut Shortbread Crust

Ingredients

  • 1 cup  whole-wheat pastry flour
  • 1/4 cup  all-purpose flour
  • 1/2 cup  hazelnuts
  • 1/4 cup  sugar
  • 1/2 teaspoon  salt
  • 4 tablespoons  cold unsalted butter, cut into small pieces
  • 2 tablespoons  hazelnut oil, or canola oil
  • 1 tablespoon  ice water
  • 1 1/2 teaspoons  unflavored gelatin
  • 1 tablespoon  water
  • 3/4 cup  low-fat milk
  • 2   large egg yolks
  • 2 1/2 tablespoons plus 1/4 cup  sugar, divided
  • 1 tablespoon  all-purpose flour
  • 2 ounces  unsweetened chocolate , finely chopped
  • 1 tablespoon  coffee liqueur, such as Kahlua (optional)
  • 4 dried egg whites  (see Ingredient Note), reconstituted according to package directions (equivalent to 2 egg whites)
  • 1/8 teaspoon  cream of tartar
