Tex-thai Chicken Breasts

Ingredients

  • 3/4 cup  bottled green salsa
  • 1/4 cup  unsweetened coconut milk
  • 1   green onion, chopped (2 Tbsp.)
  • 1/2 tsp.  finely shredded lime peel
  • 1 Tbsp.  lime juice
  • 1 Tbsp.  chopped fresh cilantro
  • 1 Tbsp.  chopped fresh mint
  • 1 tsp.  green curry paste
  • 1 tsp.  grated fresh ginger
  • 1 tsp.  soy sauce
  • 1 clove  garlic, minced
  • 4   skinless, boneless chicken breast halves (1-1/4 lb. total)
  •   Chopped mango
  •   Chopped cucumber
  •   Fresh mint (optional)
