Classic Lemon Meringue Pie

Ingredients

  •   Pastry:
  • 1-1/3 cups  all-purpose flour
  • 2 tablespoons  sugar
  • 1/2 teaspoon  salt
  • 1/2 cup  (1 stick) regular margarine
  • 3 tablespoons  cold water
  •   Lemon Filling:
  • 3 large  lemons
  • 1-3/4 cups  sugar
  • 3/4 cup  cornstarch
  • 1/4 teaspoon  salt
  • 2-1/4 cups  water
  • 6   eggs, separated in yolks, whites
  • 2 tablespoons  butter or margarine
  •   Meringue:
  • 6   egg whites from Filling, above, plus 2 more whites
  • 1/2 teaspoon  cream of tartar
  • 3/4 cup  sugar
