Garlic-and-herb-roasted Lobster With Crispy Potato Chips

Ingredients

  • 1/2 bunch  fresh Italian flat-leaf parsley
  • 4 sprigs  fresh thyme, leaves only
  • 5   garlic cloves, peeled and gently smashed
  • 1/2   stick unsalted butter, melted
  •   Kosher salt and freshly ground black pepper
  • 2 cups  panko (Japanese bread crumbs)
  • 2   live lobsters (about 4 pounds total)
  •   Extra-virgin olive oil
  • 2   lemons, cut into large wedges, to serve
  •   Drawn butter, to serve
  • 1   recipe Crispy Potato Chips (see recipe, below)

Description

Preheat Oven To 400 Degrees F. In A Food Processor Combine Parsley, Thyme, Garlic, And Melted Butter And Season With Salt And Pepper. Process Until Well Combined. Add The Panko; Pulse 1 To 2 Times Just To Combine. Set Aside.
