Asian Beef Kabobs


  • 1 pound  beef tenderloin, cut into 1 1/4- to 1 1/2-inch cubes
  • 3 ears  sweet corn, cut into 1 1/2-inch pieces
  • 8   baby bok choy (optional)
  • 2 small  red, orange, and/or yellow sweet peppers, cut into 1 1/2-inch pieces
  • 2 tablespoons  reduced-sodium soy sauce
  • 2 tablespoons  peanut oil
  • 2 tablespoons  orange juice
  • 1/4 teaspoon  cayenne pepper or crushed red pepper flakes
