  • 1   beaten egg
  • 1/4 cup  milk
  • 3/4 cup  finely crushed rich round crackers
  • 2 tablespoons  all-purpose flour
  • 2 tablespoons  grated Parmesan cheese
  • 1/4 teaspoon  pepper
  • 7 tablespoons  cooking oil
  •   Curly endive (optional)
