Pineapple-bourbon Chutney

Ingredients

  • 1   fresh pineapple, peeled, cored, and diced (about 4 cups)
  • 1 large  yellow onion, chopped (about 1-1/2 cups)
  • 1 cup  packed light brown sugar
  • 3/4 cup  apple cider vinegar
  • 1/4 cup  bourbon or dark rum
  • 3 tablespoons  finely chopped fresh ginger
  • 1 tablespoon  lightly packed finely grated lemon zest
  • 1 tablespoon  fresh lemon juice
  • 1/2 teaspoon  ground cloves
  •   Kosher salt and freshly ground black pepper
