Ingredients

  • 1 box   Pillsbury® refrigerated pie crusts, softened as directed on box
  • 1/4 cup   sugar
  • 1/4 cup   cornstarch
  • 1 cup   canned cream of coconut (not coconut milk)
  • 1 cup   whole milk
  • 2   egg yolks
  • 1 tablespoon   butter or margarine
  • 2 tablespoons   dark rum or 1 1/2 teaspoons rum extract
  • 1 can  sliced pineapple, drained, slices cut in half (20 ounces)
  • 1/4 cup   apricot jam
  • 1 tablespoon   dark rum or orange juice
  • 2 tablespoons   coconut, toasted*
