Chinese Five-spice Halibut With Pickled Red Pepper & Ginger

Ingredients

  • 2/3 cup  very thinly sliced red bell pepper (from about half a pepper)
  • 1/2 tablespoon  peeled and very finely julienned ginger (from a knob about 1/2 x 1-1/2 inches)
  • 1 teaspoon  peanut, vegetable, or grapeseed oil
  • 1 clove  garlic, thinly sliced
  • 2 tablespoons  plain seasoned rice vinegar
  • 2 tablespoons  mirin
  • 1   scallion, trimmed, cut crosswise into 1-1/2-inch lengths, and thinly slivered lengthwise
  • 1 teaspoon  Asian sesame oil
  • 1 tablespoon  finely grated orange zest
  • 1 tablespoon  light brown sugar
  • 1-1/2 teaspoons  kosher salt
  • 1 teaspoon  five-spice powder
  • 1/2 teaspoon  freshly ground black pepper
  • 1/8 teaspoon  cayenne
  • 4   skinless halibut fillets (about 6 ounces each)
  • 3 tablespoons  peanut, vegetable, or grapeseed oil
