  • 2 14-oz. cans  reduced-sodium chicken broth or 3-1/2 cups chicken stock
  • 1 cup  uncooked wild rice, rinsed and drained
  • 1 cup  chopped celery
  • 1/2 cup  chopped onion, sliced leek or green onions
  • 1/4 to 1/2 tsp.  ground black pepper
  • 1 lb.  skinless, boneless chicken breast halves
  • 1 Tbsp.  olive oil
  • 1 14-oz. can  can reduced-sodium chicken broth or 1-3/4 cups chicken stock or water
  • 1 10-3/4-oz. can  condensed cream of chicken with herb soup
  •   Thin strips of carrot (optional)
