Tarragon Tuna Melts

Ingredients

  • 1/3 cup  mayonnaise or salad dressing
  • 3 tablespoons  snipped fresh Italian parsley
  • 2 tablespoons  snipped fresh chives
  • 1 to 2 tablespoon  snipped fresh tarragon or 2 tsp. dried tarragon, crushed
  • 1 teaspoon  finely shredded lemon peel
  • 2 teaspoons  lemon juice
  • 1 teaspoon  Dijon-style mustard
  • 1/8 teaspoon  ground black pepper
  • 1 12-ounce can  solid white tuna (in water), drained and flaked
  • 8 1/2-inch slices  sourdough bread
  • 8 to 12  thin tomato slices (optional)
  • 4 ounces  sharp white cheddar cheese, shredded (1 cup)
  • 2 tablespoons  butter, softened
