Company-pleasing Crab Cakes

Ingredients

  • 1/4 cup  butter or margarine
  • 1   red or green sweet pepper, chopped (3/4 cup)
  • 1/2 cup  finely chopped celery
  • 3 tablespoons  finely chopped onion
  • 3/4 cup  fine dry bread crumbs
  • 2   slightly beaten eggs
  • 2 teaspoons  snipped fresh parsley
  • 1 teaspoon  dried thyme, crushed
  • 1 teaspoon  dried tarragon, crushed
  • 1 teaspoon  paprika
  • 1/2 teaspoon  dry mustard
  • 1/2 teaspoon  salt
  • 10 ounces  cooked crabmeat, chopped (2 cups) or two 6-1/2-ounce cans crabmeat, drained, flaked and cartilage removed
  •   Braised Black Beans (see recipe below)
  •   Pineapple Salsa (see recipe below)
  •   Fresh cilantro sprigs (optional)

Description
