Black Lentil Soup

Ingredients

  • 1 cup  black lentils, 6 ounces
  • 2   cardamom pods
  • 1   1-inch piece of fresh ginger, peeled and thinly sliced, plus 2 tablespoons minced ginger
  • 5 tablespoons  unsalted butter
  • 1   onion, cut into 1/2-inch dice
  • 2   garlic cloves, minced
  • 1/2 teaspoon  ground coriander
  • 1/2 teaspoon  ground cumin
  • 1/4 teaspoon  cayenne pepper
  • 1/4 teaspoon  garam masala
  • 2 quarts  vegetable stock or low-sodium broth
  • 1 cup  canned crushed tomatoes
  •   Salt
