  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 1 1/2 pounds pork tenderloin, chicken or veal cutlets pounded 1/8-inch thick
  • Salt and pepper
  • Extra virgin olive oil (EVOO), for frying
  • 3 ripe heirloom tomatoes, diced
  • 1 ear corn, kernels scraped from the cob
  • 1/2 small red onion, finely chopped
  • 1/2 cup basil leaves, torn or shredded, or 1/4 cup tarragon leaves, chopped
