  • 2 tablespoons butter, divided
  • 2/3-3/4 cup broken spaghetti or orzo pasta
  • 1 onion, finely chopped
  • 1 small carrot, grated or finely chopped
  • 2-3 cloves garlic, finely chopped
  • Salt and pepper
  • 1 cup long grain rice
  • 1 bay leaf
  • 1 cinnamon stick (3 inch)
  • 2 tablespoons fresh thyme, chopped
  • 1/2 lemon, juiced, plus 1 teaspoon lemon zest
  • 3/4-1 pound cooked turkey, chopped
  • Chopped parsley or cilantro, for garnish
