- 1 cup long grain rice
- 1 bay leaf
- 1 cinnamon stick (3 inch)
- 2 tablespoons fresh thyme, chopped
- 1/2 lemon, juiced, plus 1 teaspoon lemon zest
- 3/4-1 pound cooked turkey, chopped
- Chopped parsley or cilantro, for garnish
