Ingredients

  • 2 small white onions, finely minced
  • 2 carrots, finely diced
  • 2 stalks celery, finely diced
  • 4 Tbsp butter
  • Sprig of fresh thyme
  • 1 bay leaf
  • 2 cups wild rice
  • 3½ cups boiling water or chicken stock
  • Flaked salt, to taste
  • Freshly ground black pepper, to taste
