1/4 cup grated cheddar cheese or grated Pepper Jack cheese
1/2 cup buttermilk
Tomato Filling:
2 Tbsp. unsalted butter
1/2 Vidalia onion , chopped
1 stalk celery , chopped
2 cloves garlic , minced
1 jalapeno pepper , seeded and minced
3 cups baby pear tomatoes (red and yellow), cut in half lengthwise
2 Tbsp. all-purpose flour
Salt and freshly ground black pepper to taste
1 egg white , beaten
2 Tbsp. water
2 Tbsp. grated Parmesan cheese
