Poor Man's Chicken Fricassee

Ingredients

For the poaching:

  • 1 chicken, aproximately 1,3 kg, preferably organic
  • 300 ml of dry white wine
  • 3 handfulls of soup veggies or aproximately 1 medium sized carrot, one leek, two stalks of celery, a few sprigs of parsley
  • 2 bay leaves
  • a sprinkle of salt
  • good grinding of pepper
  • cold water
  •  

    For the sauce:

  • 80g of butter
  • 40g of plain flour
  • 200ml of single cream
  • spritz of lemon
  • salt, pepper and worcester sauce to taste
  •  

    To serve with:

  • 400g of rice (I like parboiled with this)
  • 200g of green peas, frozen
