Ingredients
- red onion Marmalade

- 1 Tbs butter
- 1 large red onion, thinly sliced
- 1 garlic clove, minced
- 1 c. port wine
- 1 c. Burgundy wine (or any dry red)
- 1/2 c. fresh orange juice
- 1/3 c. honey
- 1/4 c. balsamic vinegar
- 1 tsp. orange zest

- 4-7 to 9 oz filet mignon
- 2 large garlic cloves cut in half
- salt and fresh cracked pepper
- 1 - 8 oz Block of blue cheese (I like Stilton or gorgonzola)
Description
This Is The Best Way To Eat A Filet Mignon. I Had It In A Restaurant And Went Straight Home And Found A Recipe For The Red Onion Marmalade (stolen From Scearley) That Is A Perfect Compliment To The Beef And The Blue Cheese On Top.
