Ingredients
- BEETAPPLE W O W Drink (looks like burgundy - taste the power).
- Prepare one day ahead.
- 1 medium size PEELED beetroot, cut into quarters and boil in 1 litre water 20 mins.
- Cool beetroot in the water overnight and slice when needed. (Reserve the liquid for the drink).
- VEGETARIAN POWER BOOSTER DISH
- 1 tablespoon olive oil
- 1/2 cup sliced leek
- 3 celery sticks chopped
- 1 thinly sliced carrot
- 3 cloves chopped & sliced garlic
- 1 teaspoon finely chopped raw ginger
- 1 cup cooked baked beans in tomato sauce
- 4 slices of cooked beetroot
- 2-3 slices sundried tomato and basil flavoured wholegrain rice cakes (broken into 1/4 bits)
