Ingredients
- 2 cups black beans soaked overnight
- 4 cups broth (I used veggie b/c that is what I had)
- 1 large onion, chopped
- 2 heaping Tbsp minced garlic
- 5 celery tops w/ leafs, chopped
- 1 can beer (I used Bud Light, but a better beer wouldn't hurt)
- 2 boneless skinless chicken breasts, chopped
- to taste:
- chili powder, basil and cumin
- 2 heaping Tbsp minced garlic
- 1 can no salt added stewed tomatoes, drained
- 1/2 cup chopped green onions
- 1/2 no fat black refried beans
- 1 sm can diced jalapenos
- large tortillas (I used whole wheat)
- garlic powder
- mixed greens (for lunch today I used spinach only)
