Ingredients
- 6 cups instant mashed potatoes(make according to package directions)
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/2 cup chopped dill pickles(you can use sweet if preferred)
- 1/2 cup chopped green onions
- 1/3 cup chopped green olives plus 1/4 cup of the juice from the olives
- 1 cup mayonnaise
- 1 tablespoon yellow mustard or brown mustard
- 1/2 cup sour cream
- dash of creole seasoning
- pepper and salt to taste
- *2 hard boiled eggs, chopped(optional)

I Worked With A Wonderful Resource Helping Teacher, A True Southern Lady From Texas Named Martha. She And I Did A Lot Of Cooking Together For School Occasions. She Made A Quick Potato Salad That Was Unbelievable And Quick. I Put My Own Little Twist On It
