Ingredients
- 4 boneless, skinless chicken breasts, pounded to uniform thickness
- 8 strips bacon, cooked until crisp and halved
- 1 cup flour
- 1 tablespoon dired rosemary
- 1 tablespoon poultry seasoning
- 2 large eggs, beaten
- kosher salt
- fresh ground pepper
- pasta sauce (recipe follows)
- Fresh mozzarella (packed in water) sliced
- For the pasta sauce
- 1 tablespoons olive oil
- 1 garlic clove, crushed
- 1 14.5 oz can tomato sauce
- 1 14.5 oz can diced tomatoes
- 1 4 oz can tomato paste
- 1 cup water
- 2 teaspoons balsamic vinegar
- 1 tablespoon sugar
- 1 tablespoon dried oregano
- 1 tablespoon dried marjoram
- 1 tablespoon dried basil
- 1 tablespoon italian seasoning
- 1/2 cup grated parmesan cheese
- 1 cup fresh basil, chopped
- salt and fresh ground pepper
Description
For The Ethnic Challenge, (Playful Pantry) I Wanted Something Italian, But Didn't Have Alot To Work With. I Had Pasta Sauce And Chicken Breasts In The Freezer, And This Is The Result. Definately One To Do Again!
