- 1lb rigatoni or penne pasta, dried(
- 1 medium onion, diced fine
- 1 stick butter
- 1/2 cup flour
- 1 cup heavy cream
- 2 1/2-3 cups milk
- 1t celery powder
- 2t dry mustard
- dash of hot sauce(don't leave this out, it really enhances all the cream)
- 8oz softened cream cheese
- 8oz Chipotle Gouda, shredded(should yield 2 cups)
- 8oz colby Jack or monterey jack cheese, shredded(I used Cojack)
- about 4oz Gruyère or fontina, shredded
- fresh ground or white pepper or peppercorn blend
- Optional Ingredients
- 1/2 cup panko bread crumbs
- 1/4 cup Cotija, Manchego, or Parmesan
- butter or olive oil
