Scallion Pesto And Roasted Tomato Linguine Recipe

Ingredients

  • 2 cups cherry tomatoes
  • 1 tbsp olive oil (I used a lighter tasting one)
  • salt and freshly ground pepper to taste
  • 8 oz linguine noodles approx.
  • 2 tbsp hazelnuts or walnuts
  • 1 cup chopped scallions
  • 1 tsp chopped garlic
  • 1/4 cup olive oil ( I used a lighter tasting one)
  • 1/4 cup grated parmesan cheese
  • 2 tbsp pasta cooking water (makes the pasta creamy)
  • 2 oz grated hard goat cheese or substitute with feta or gouda cheese
