Grand Marnier Souffle Recipe

Ingredients

  • 1/4 cup + 2 Tablesps. sugar
  • 1/4 cup + 2 Tablesps. cornstarch
  • Grated rind of 2 oranges
  • 1 and 1/4 cups milk
  • 3 Tablesps. Grand Marnier or other orange-flavored liqueur
  • 1 and 1/2 Tablesps. butter; melted
  • 6 egg-yolks; beaten
  • 8 egg-whites; at room temperature
  • 1/2 cup sugar
  • for the cream fraiche sauce:
  • 1/3 cup commercial sour cream
  • 1 cup whipping cream
  • 1 Tablesp. + 2 teasps. cream cheese; softened1/3 cup powdered sugar
  • 1 teasp. amaretto liqueur

This Souffle Is Very Elegant & Rich. It Isn't Difficult To Make, But You Must Watch The Custard Constantly, While Cooking, As Not To Scorch It. Delicious!
