Koto Me Kasseri - Chicken Parmagiana A La Greque Recipe

Ingredients

  • 1 ½ cups of coarse fresh bread crumbs
  • 1 cup of grated fresh Kasseri cheese (accept NO substitute)
  • 2 egg + ¼ cup of milk
  • flour
  • More fresh Kasseri – not grated
  • ---
  • 3 tender smaller sized zucchinis
  • 4 cups of small mushrooms
  • 16 oz. of cooked ziti
  • ¼ lb. of butter
  • ---SAUCE---
  • 2 lbs. of fresh tomatoes
  • 1 cup of sundried tomatoes
  • 1/3 a bunch of celery
  • 1 large onion
  • 3-4 tbls. of chopped garlic
  • 1 ½ cups of white retsina
  • 2 cups of chicken stock
  • 1 cups of tomato sauce
  • Fresh oregano, flat leafed parsley and even basil.
  • salt. pepper

Description

Its Too Bad I'm A Monk And Can't Eat Meat...Hmm...why Don't I Make Make Them With Large Shrimp Then. In Which Case Use Fish Stock, Of Course!
