- 1 large eggplant -- peeled and diced
- 2 pounds lean ground beef
- 1/2 cup freshly grated Parmesan or romano cheese
- 3 garlic cloves -- crushed
- 1/2 cup bread crumbs
- 2 eggs
- 1/2 teaspoon basil
- salt and black pepper -- freshly ground, to taste
- 2 tablespoons olive oil
- 1 cup spaghetti sauce
- 1/2 cup freshly grated Parmesan or romano cheese
- 3/4 pound muenster cheese -- thickly sliced (seems to be I've used other cheeses on occasion)
