Ingredients
- jelly Roll:
- 1 Jar of organic crofters premium fruit spread (Raspberry, Cherry or Strawberry)
- 2 grass fed egg yolks
- 4 grass fed egg whites
- ¾ cup organic sifted flour
- ¼ cup + 1/8 cup organic cane sugar
- 1/8 cup water
- 4 oz grass fed whipping cream
- 1 tsp organic vanilla
- OPTIONAL: 1 tbs organic coco powder (for a chocolate log only- not pictured but best with cherry filling)
- fruit and chocolate shavings for decoration
- Pre-heat oven to 350
- Cream together egg yolks, ¼ cup sugar and water until smooth, fold in sifted flour (and cocoa if chocolate). Beat egg whites until firm, and then fold into yolk mixture. Spread evenly on a well greased and floured jelly roll pan or sided cookie sheet. Bake for 7 minutes until lightly golden.
- Tip cake out onto a moistened tea towel and roll in with the damp towel to make sure it is kept moist. When almost cool, spread evenly with jam and re-roll. Cover and refrigerate over night or at least 1 hour.
- whip cream, vanilla and 1/8 cup sugar until soft peaks form. Spread over log with a cake knife or use a pastry bag. Decorate with fruit and chocolate shavings, refrigerate.
