  • 4 ounces unsalted butter
  • 3 Yukon gold potatoes, washed and medium diced
  • 2 cups heavy cream
  • Salt and freshly ground black pepper
  • 2 tablespoons freshly chopped parsley leaves
  • Oyster crackers, for garnish
