  • 1/2 cup reserved potato cooking water
  • Salt and freshly ground black pepper
  • 1/4 pound pancetta ham, cut into 1/4-inch cubes
  • 1/2 pound cremini mushrooms, cleaned and chopped
  • 1/2 cup dried bread crumbs
  • 6 large eggs, lightly beaten
  • 1 cup freshly grated Parmesan
  • 1/2 bunch fresh chopped mint leaves
