Crab Cake Po' Boys with Lemon Aioli
Ingredients
LEMON AIOLI
- 1cup mayonnaise
- 2tablespoons fresh lemon juice
- 1tablespoon finely grated lemon zest
- 1large garlic clove, minced
- 2tablespoons chopped flat-leaf parsley
- 1teaspoon minced thyme
- 1 1/2teaspoons honey
- Kosher salt and freshly ground pepper
PO’ BOYS
- 3tablespoons mayonnaise
- 3tablespoons minced piquillo peppers (about 3)
- 1tablespoon minced cornichons (about 4)
- 1small shallot, minced
- 1large egg
- 1 1/2teaspoons chopped flat-leaf parsley
- 1teaspoon Dijon mustard
- 1teaspoon kosher salt
- 1/2teaspoon finely grated lemon zest
- Freshly ground pepper
- 1pound jumbo lump crabmeat, picked over
- 2 1/4cups plus 2 tablespoons panko (Japanese bread crumbs)
- Vegetable oil, for frying
- Four 8-inch hoagie rolls or baguettes, split
- 2tablespoons unsalted butter, softened
- 2cups shredded iceberg lettuce
- 10cherry tomatoes, thinly sliced
