  1. 3tablespoons mayonnaise
  2. 3tablespoons minced piquillo peppers (about 3)
  3. 1tablespoon minced cornichons (about 4)
  4. 1small shallot, minced
  5. 1large egg
  6. 1 1/2teaspoons chopped flat-leaf parsley
  7. 1teaspoon Dijon mustard
  8. 1teaspoon kosher salt
  9. 1/2teaspoon finely grated lemon zest
  10. Freshly ground pepper
  11. 1pound jumbo lump crabmeat, picked over
  12. 2 1/4cups plus 2 tablespoons panko (Japanese bread crumbs)
  13. Vegetable oil, for frying
  14. Four 8-inch hoagie rolls or baguettes, split
  15. 2tablespoons unsalted butter, softened
  16. 2cups shredded iceberg lettuce
  17. 10cherry tomatoes, thinly sliced
