Ligurian Seafood Soup

Ingredients

  1. 1/4 cup extra-virgin olive oil, plus more for serving
  2. 1large sweet onion, thinly sliced
  3. 2garlic cloves, thinly sliced
  4. 1/4 cup finely chopped flat-leaf parsley
  5. 1/2 teaspoon crushed red pepper
  6. One 28-ounce can whole peeled Italian tomatoes, drained and chopped
  7. 2strips of orange zest (optional)
  8. Salt and freshly ground black pepper
  9. Four 8-ounce skinless halibut or other meaty white fish fillets
  10. 2cups pitted green and black olives, such as picholine and kalamata (about 3/4 pound)
  11. 2pounds large shrimp, shelled and deveined
  12. 1pound cleaned calamari, bodies cut into 1/2-inch rings
  13. 20littleneck clams, scrubbed
  14. 1pound mussels, scrubbed and debearded
  15. 2cups bottled clam juice
  16. 1cup dry white wine
  17. Grilled bread, for serving (optional)
