Sardinian-Style Paella

Ingredients

  1. Large pinch of saffron threads
  2. 6 1/2cups warm water
  3. 3 tablespoons extra-virgin olive oil
  4. 1 medium onion, finely chopped
  5. 3 large garlic cloves, thinly sliced
  6. 1 pound fregola (2 1/4 cups)
  7. 1/2pound chorizo, thinly sliced
  8. 1 cup canned diced tomatoes, drained
  9. 1 cup dry white wine
  10. Salt and freshly ground pepper
  11. 2 pounds large shrimp, shelled and deveined
  12. 2 pounds red snapper, cod or monkfish, cut into 2-inch pieces
  13. 1 pound mussels, scrubbed and debearded
  14. 1 pound cockles, scrubbed
  15. 2 tablespoons chopped flat-leaf parsley
