Ingredients

  1. 2 cups drained and rinsed canned cannellini beans (one 19-ounce can)
  2. 4 cups water, more if needed
  3. 3 slices bacon, cut crosswise into 1/4-inch strips
  4. 3/4 teaspoon dried rosemary, crumbled
  5. 1 onion, chopped
  6. 2 cloves garlic, minced
  7. 2 carrots, chopped
  8. 1 rib celery, chopped
  9. 3/4 pound cabbage (about 1/2 small head), chopped (about 3 cups)
  10. 3/4 pound Swiss chard, tough stems removed, leaves washed well and chopped
  11. 2 teaspoons salt
  12. 1 teaspoon fresh-ground black pepper
  13. 2 cups canned tomatoes with their juice (from a 28-ounce can)
  14. 2 1 1/4-inch-thick slices country bread
