  1. 3 tablespoons soy sauce
  2. 2 tablespoons pure maple syrup
  3. 2 large shallots, minced
  4. 2 teaspoons curry powder
  5. Two 2 1/2 -pound beef tenderloins
  6. 2 tablespoons vegetable oil
  7. Salt

VEGETABLES

  1. 1 1/2 pounds sugar snap peas
  2. 2 pounds fresh lima beans, shelled (about 2 cups)
  3. 2 1/2 tablespoons curry powder
  4. 4 teaspoons mustard seeds
  5. 2/3 cup pure olive oil
  6. 6 tablespoons white wine vinegar
  7. 3 large garlic cloves, minced
  8. 2 teaspoons finely grated lemon zest
  9. 1 1/2 teaspoons kosher salt
  10. 4 bunches red radishes, quartered
  11. 4 cucumbers--peeled, halved lengthwise, seeded and sliced 1 inch thick
  12. 1/2 cup snipped chives
