  • Two 2 1/2 -pound beef tenderloins
  • 2 tablespoons vegetable oil

  • 1 1/2 pounds sugar snap peas
  • 2 pounds fresh lima beans, shelled (about 2 cups)
  • 2 1/2 tablespoons curry powder
  • 4 teaspoons mustard seeds
  • 2/3 cup pure olive oil
  • 6 tablespoons white wine vinegar
  • 3 large garlic cloves, minced
  • 2 teaspoons finely grated lemon zest
  • 1 1/2 teaspoons kosher salt
  • 4 bunches red radishes, quartered
  • 4 cucumbers--peeled, halved lengthwise, seeded and sliced
  • 1 inch thick
  • 1/2 cup snipped chives
